Wedding Ideas’ very own DIY expert Alice Rimes has been busy baking up a storm this weekend and she’s come up with a fabulous, easy and fun recipe that you can use as wedding favours on your big day.
Peppermint creams are super easy to make, and have a lovely, nostalgic taste that will take you right back to childhood. They can be decorated as elaborately or as simply as you like. Wrap them in little organza favour bags or place them on vintage plates on your tables and let guests help themselves!
What you’ll need
- One medium egg
- Juice of half a lemon
- One teaspoon of peppermint flavouring
- 425g of icing sugar (plus a bit extra for dusting)
- 175g of dark chocolate
Instructions
Split the egg and whisk the white in a bowl until it forms stiff peaks (You can try the old tipping the bowl over your head trick, if you’re feeling brave!). Then, slowly mix in the lemon juice, peppermint flavouring and icing sugar, until it becomes a stiff paste.
Tip the peppermint mixture onto a clean work surface, that’s been dusted with icing sugar, and roll out thinly.
Using a cookie cutter, cut out some shapes (you could use hearts or star shapes for a more romantic look) and place them onto a baking tray. Chill in the fridge for one to two hours, until the mixture has completely set.
Meanwhile, melt the chocolate – either in a bowl over a pan of simmering water, or very slowly in the microwave.
Dip each peppermint cream into the melted chocolate and set aside to cool again. If you want to try getting fancy, why not try your hand at drizzling the chocolate artily over your peppermints.
Finally, let them all cool completely then box or bag them up. I love using clear cellophane bags, tied with a luggage tags with the guests name on.
